February is here! It’s a month that surely focuses on appreciating the people we love.
This is probably the most cliche thing to say, but our dogs have really figured out the whole unconditional love thing. Honestly though, Minnie running up to me when I get home from the office, so excited that she can’t even contain herself or regulate her breathing, makes me smile no matter how annoying my day was. She doesn’t care if I made good business decisions that day, ate unhealthy food or worked past the time I’m supposed to. She just wants to plop her fluffball butt in my lap and have me all to herself.
So it’s only right to make her some special treats this month and repay some of the joy she gives me every day. These treats are easy to make, gluten-free with no added sweeteners, colored naturally with beets and flavored with real sweet potato.
What you’ll need:
- 1 egg
- 1 cup cooked beets
- 1/2 cup cooked sweet potato
- 2.5 cups rice flour
- 1/2 cup water
Preheat your oven to 350 degrees F. Use a food processor to puree the cooked beets and sweet potato. To save time, you can use canned versions of these veggies, but be careful of the additives and sweeteners that tend to be in canned foods.
Combine the beet and sweet potato puree in a large bowl with the flour, water and egg. Mix well until you start to form a tough dough.
You may need to get up in there with your hands and knead the dough to get a smooth texture. Your dog won’t mind.
Roll out the dough to 1/4 inch thick and use a heart-shaped cookie cutter to stamp out the cookies and place them on a baking pan. Place them in the oven and cook for 40 mins. Make sure you give them ample time to cool before removing the treats from the baking pan.
Place your treats in a bakery box,
Or tie them up in little cellophane bags to share.
And enjoy!! Your dog will love these, and there are no harmful chemicals or additives to be wary of. Just be sure you feed them to your dog within a week, because since they have no preservatives in them they won’t last long!
