Whether your festivities are loud and crowded or cozy and understated, this chicken salad recipe will be a hit. And here’s the best part – not only is this recipe extremely low in fat and healthy for you, but it’s also 100% dog friendly, which means that both you and Fido can pig out guilt-free.

Are you planning on a Super Bowl party this year, or are you going to just prepare some snacks and watch from the couch? Whether your festivities are loud and crowded or cozy and understated, this chicken salad recipe will be a hit. And here’s the best part – not only is this recipe extremely low in fat and healthy for you, but it’s also 100% dog friendly, which means that both you and Fido can pig out guilt-free.

Here’s what you’ll need:

  • 2-3 cups of Chicken, boiled and separated (cubed or shredded)
  • 1 cup chopped melon (honeydew/cantaloupe – we used both)
  • 1 cup chopped apple
  • 1 cup finely chopped celery
  • 1 cup low fat sour cream
  • 1 tbsp pineapple juice

For human portion only (optional)

  • Salt to taste
  • Halved grapes
  • Craisins

Combine all of the chicken with the chopped fruits/veggies. Combine together until the add-ins are evenly dispersed in the chicken. Add the sour cream and the pineapple juice and combine until all ingredients are evenly moistened. Serve immediately, and refrigerate any unused portions.

What we love most about this recipe is that it can be tailored for your particular taste. If you like different fruits, you can add them instead. You can even add chopped nuts for some crunch! You can roll this chicken salad up in a mini taco wrap, or serve it atop a cracker for some tasty party finger foods.  If you choose to add the grapes in your portion, be very sure that your dog doesn’t get any! Grapes can be poisonous to dogs.
